If you want a very flavorful Asian-type meal with a juicy chicken and a sweet heat, My Sweet Chili Lime Chicken is a good choice! It's so easy to make and contains the perfect flavors (chili, lime, and soy sauce).

Ingredients

6 - 8 pieces of skinless boneless chicken thighs

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

2 tbsp of avocado oil for frying

1 inch of julienned ginger

1 tbsp of minced garlic (3 cloves)

Sweet Chili Lime Sauce:

Zest and juice of 1 lime

2 tbsp Soy sauce

2 tbsp sweet chili sauce

1 tbsp sesame oil

Instructions

1. Prepare the Chicken:

  • Start by seasoning the chicken thighs. In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper.

     

  • Rub the spice mixture evenly over each chicken thigh, ensuring they are well coated. Set aside while you prepare the sauce.

     

2. Make the Sweet Chili Lime Sauce:

  • In a separate bowl, whisk together the lime zest, lime juice, soy sauce, and sweet chili sauce until well combined. Set aside.

     

  • Optionally, add a few drops of sesame oil to the sauce for extra flavor. Adjust the amount according to your preference.

     

3. Cook the Chicken:

  • Heat avocado oil in a large skillet or frying pan over medium-high heat.

     

  • Once the oil is hot, add the seasoned chicken thighs to the pan in a single layer. Cook for about 5-6 minutes on each side or until golden brown and cooked through.

     

  • Remove the cooked chicken from the pan and set aside on a plate.

     

4. Prepare the Sauce and Finish Cooking:

  • In the same skillet, add the julienned ginger and minced garlic. Saute for about 1-2 minutes until fragrant.

     

  • Pour the prepared sweet chili lime sauce into the skillet, stirring to combine with the ginger and garlic.

     

  • Return the cooked chicken thighs back to the skillet, coating them evenly with the sauce.

     

  • Reduce the heat to medium-low and let the chicken simmer in the sauce for an additional 2-3 minutes, allowing the flavors to meld together and the chicken to absorb the sauce.

     

  • Make sure the chicken is fully cooked through and the sauce has thickened slightly.

     

5. Serve:

  • Once the chicken is cooked and the sauce has thickened, remove the skillet from the heat.

  • Garnish with additional lime zest or chili oil.

     

  • Serve the Sweet Chili Lime Chicken hot, accompanied by your favorite sides like steamed rice, roasted vegetables, or a salad.
