Ingredients
6 - 8 pieces of skinless boneless chicken thighs
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
2 tbsp of avocado oil for frying
1 inch of julienned ginger
1 tbsp of minced garlic (3 cloves)
Sweet Chili Lime Sauce:
Zest and juice of 1 lime
2 tbsp Soy sauce
2 tbsp sweet chili sauce
1 tbsp sesame oil
Instructions
1. Prepare the Chicken:
- Start by seasoning the chicken thighs. In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Rub the spice mixture evenly over each chicken thigh, ensuring they are well coated. Set aside while you prepare the sauce.
2. Make the Sweet Chili Lime Sauce:
- In a separate bowl, whisk together the lime zest, lime juice, soy sauce, and sweet chili sauce until well combined. Set aside.
- Optionally, add a few drops of sesame oil to the sauce for extra flavor. Adjust the amount according to your preference.
3. Cook the Chicken:
- Heat avocado oil in a large skillet or frying pan over medium-high heat.
- Once the oil is hot, add the seasoned chicken thighs to the pan in a single layer. Cook for about 5-6 minutes on each side or until golden brown and cooked through.
- Remove the cooked chicken from the pan and set aside on a plate.
4. Prepare the Sauce and Finish Cooking:
- In the same skillet, add the julienned ginger and minced garlic. Saute for about 1-2 minutes until fragrant.
- Pour the prepared sweet chili lime sauce into the skillet, stirring to combine with the ginger and garlic.
- Return the cooked chicken thighs back to the skillet, coating them evenly with the sauce.
- Reduce the heat to medium-low and let the chicken simmer in the sauce for an additional 2-3 minutes, allowing the flavors to meld together and the chicken to absorb the sauce.
- Make sure the chicken is fully cooked through and the sauce has thickened slightly.
5. Serve:
- Once the chicken is cooked and the sauce has thickened, remove the skillet from the heat.
- Garnish with additional lime zest or chili oil.
- Serve the Sweet Chili Lime Chicken hot, accompanied by your favorite sides like steamed rice, roasted vegetables, or a salad.
