6 chicken thighs (bone-in skin on)
2 chorizo sausages (casing removed)
1 cup of long-grain white rice, rinsed
2 cups of chicken broth, or bone broth, or water
1 red bell pepper, julienned
1 pint of cherry tomatoes, halved
1/2 red onions, minced
5 cloves of garlic, minced
1 tsp seasoning salt (I used Hy’s Seasoning Salt)
1 lime, wedged
2 tbsp of neutral oil (I used grapeseed oil)
