Ingredients

3-5 persian cucumbers*
2 tbsp low sodium soy sauce
2 tbsp rice vinegar
1 tbsp white sugar (substitute with honey)
1 tbsp toasted sesame oil
1 bird's eye chili (optional)
Instructions
- Assemble the sauce in a large bowl (soy sauce, sesame oil, sugar, rice vinegar)
- Add the chili (optional). Remove the seeds for less spice.
- Cut the cucumbers thinly. Thinner the better.
- Mix it all together.
- Let it set in the fridge for 20 mins or longer.
Notes
*English cucumbers also work but the Persian cucumbers are crisper.
* Honey or coconut sugar are great substitutes
