Asian Cucumber Salad

If you've got kids, make this. It is so refreshing and delicious. I haven't met a person that has yet to not like this recipe. It takes 5 mins to prep. Perfect side dish for any Asian meal.

Ingredients

3-5 persian cucumbers*

2 tbsp low sodium soy sauce

2 tbsp rice vinegar

1 tbsp white sugar (substitute with honey)

1 tbsp toasted sesame oil

1 bird's eye chili (optional)

Instructions

  1. Assemble the sauce in a large bowl (soy sauce, sesame oil, sugar, rice vinegar)
  2. Add the chili (optional). Remove the seeds for less spice.
  3. Cut the cucumbers thinly. Thinner the better.
  4. Mix it all together.
  5. Let it set in the fridge for 20 mins or longer.

 

Notes

*English cucumbers also work but the Persian cucumbers are crisper.
* Honey or coconut sugar are great substitutes
