These tasty Ube Cookies with White Chocolate Macadamia Nuts are to die for!

Ingredients

2 1/2 sticks of softened butter

1 cup white sugar

1/2 cup brown sugar

2 large eggs (room temperature)

2 1/4 cups all-purpose flour

1/2 tsp baking soda

1 tsp salt

2 tsp vanilla extract

1 tbsp ube extract

2 cups of white chocolate chips

1/2 cup of macadamia nuts

Instructions

  1. Preheat the oven to 350 degrees.
  2. In an electric mixer bowl using a paddle accessory, beat the butter, and both sugars.
  3. Beat in the salt, vanilla, eggs, and ube extract until well combined.
  4. In a separate bowl, whisk the flour and baking soda.
  5. Mix in the flour mixture until just combined.
  6. Add and stir in the white chocolate chips and macadamia nuts.
  7. Using a 1" ice cream scoop, drop a ball of dough 1-2 inches apart in a parchment-lined baking tray.
  8. Bake the cookies for 9-10 minutes.
  9. Let the ube cookies cool on a cooling rack.
