My Cilantro Lime Rice recipe is an excellent way to use up those remaining grains and turn them into a perfect side dish. Plus, it only takes a few ingredients and minutes to prepare!

Ingredients

Scale

2 cups of day-old rice

2 tbsp of butter

2 tbsp finely minced cilantro

Zest of 1 lime

Juice of 1/2 of lime

1/2 tsp of salt

Instructions

  1. Start by heating up the leftover rice in the microwave using a damp paper towel or parchment paper. Set the microwave for 2 minutes. The rice should be sure hot.
  2. Then, add in the butter, lime juice, lime zest, cilantro, and salt. Mix everything well.
  3. Serve and enjoy!
