Asian Air Fryer Bone-In Pork Chops

These air fryer bone-in pork chops are everything you want in a chop: juicy, caramelized on the outside, and packed with a garlicky ginger-soy marinade that makes them taste as if they came from a restaurant. The bone-in cut does a lot of the heavy lifting here. More fat, more flavour, and way harder to overcook than boneless. I've made these probably a dozen times to nail the timing and the marinade ratios, and this version is the one I keep coming back to.

Ingredients
  

  • 2 bone-in pork chops 1 inch thick
  • Juice of ½ of a lime
  • 1 tablespoon avocado oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon dark soy
  • 1 tablespoon minced ginger
  • 1 tablespoon mined garlic
  • 1 stalk of sliced green onions

  1. Cut 3–4 small slits along the fatty edge of each chop. This prevents them from curling up in the air fryer.

  2. In a bowl, combine the lime juice, avocado oil, soy sauce, honey, garlic, ginger, green onion, salt, and pepper. Mix well.

  3. Add the pork chops to the bowl and toss to coat. Cover and marinate for 15–30 minutes at room temperature, or up to a few hours in the fridge.
  4. Preheat your air fryer to 400°F for 3–5 minutes.
  5. Place the pork chops in the air fryer basket in a single layer. Do not overlap.
  6. Air fry at 400°F for 15 minutes, flipping 2–3 times throughout cooking.
  7. Check the internal temperature. You're looking for 145°F at the thickest part.
  8. Let the pork chops rest for 3–5 minutes before serving. This keeps the juices inside the meat.

Notes

  • Go thick. Look for chops that are at least 1 inch thick. Thin chops cook too fast and dry out easily. 
  • Score the edges. Those small slits along the fat prevent the chops from curling up and cooking unevenly. Don't skip this step.
  • Let them marinate. Even 15 minutes makes a big difference. If you have 30, use 30. The honey in the marinade caramelizes in the air fryer and gives you that gorgeous color.
  • Don't crowd the basket. Hot air needs to circulate around each chop. If they're overlapping, you're steaming, not air frying. Cook in batches if needed.
  • Rest before slicing. I know it's tempting to cut in immediately, but 3–5 minutes of resting makes a real difference in how juicy the final result is.
