Ingredients

  • ½ cup mayo regular or Japanese mayo like Kewpie for extra richness
  • ¼ cup sweet chili sauce the Thai-style bottled kind
  • 1 tablespoon sriracha start here, add more if you like it hotter
  • juice of half a lime

Method

  1. Add the mayo, sweet chili sauce, sriracha and lime juice to a small bowl.
½ cup mayo, ¼ cup sweet chili sauce, 1 tablespoon sriracha, juice of half a lime
  2. Whisk or stir until completely smooth and evenly combined, about 30 seconds.
  3. Taste and adjust. Add more sriracha for heat or more sweet chili sauce if you want it sweeter.
  4. Serve immediately or refrigerate in an airtight container until ready to use.

Notes

  • Use a whisk for a smooth, glossy texture. It tastes even better after an hour in the fridge. Keeps 7 to 10 days chilled. If it splits, a small splash of water and a quick whisk brings it back. Do not freeze, mayo-based sauces separate when thawed.
