Chili Beef Noodles

Crispy ground beef, chewy rice noodles, and flexible veggies tossed in a savory chili crunch sauce. One pan, ready in 15 minutes.

Ingredients
  

  • 1 pound ground beef
  • 12 ounces rice noodles soaked in hot water for 5 minutes
  • 2 cups mushrooms sliced; I used a mix of shiitake, oyster, and king mushrooms
  • ¼ cup corn
  • ¼ cup sugar snap peas
  • 1 cup green cabbage sliced thinly
  • salt and pepper to season the beef
Sauce
  • 1 tablespoon chili crunch
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 cup water
Garnish
  • green onions sliced
  • chili crunch extra, for topping

  1. Soak the rice noodles in hot water for 5 minutes, then drain. They should be bendy but still firm. They finish cooking in the pan later.

  2. While the noodles soak, brown the ground beef in a large pan over medium-high heat until it has crispy bits. The secret is not overcrowding the pan. Let it sit and sear before you break it up. Season with salt and pepper.

  3. Prep your veggies while the beef cooks. Slice the mushrooms and cabbage thinly.

  4. Add the veggies to the pan with the beef and saute for 1 minute.
    ¼ cup corn, ¼ cup sugar snap peas, 1 cup green cabbage
  5. Add the chili crunch, oyster sauce, and sesame oil. Stir to coat everything.

  6. Add the drained noodles to the pan.
  7. Pour in 1 cup of water, cover with a lid, and let everything steam for 2 minutes.

  8. Toss until the noodles are coated and glossy. Top with green onions and more chili crunch. Eat immediately.

Notes

  • Do not overcrowd the pan. Crowded beef steams instead of searing, so brown in two batches if needed.
  • Soak the noodles no longer than 5 minutes, they finish cooking during the 2-minute steam.
  • Taste before adding salt at the end, since the oyster sauce and chili crunch both bring salt. Use whatever veggies you have on hand.
