Chili Crisp Salmon Rice Bowl

Creamy, spicy chili crisp salmon bites made in the air fryer or under the broiler in under 20 minutes. Pile them on rice with avocado and extra sauce for the easiest salmon bowl.

Ingredients
  

Chili Crisp Sauce
  • 1 tablespoon chili crisp or chili crunch
  • 2 tablespoons Kewpie mayo
  • 1 lime zested and juiced
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
Salmon
  • 16 ounces salmon skinless, cut into 2-inch cubes
To Serve
  • cooked rice
  • avocado sliced
  • salad greens
  • extra chili crisp to taste

Equipment

  • 1 baking tray lined with parchment for easy clean up

Method
 

  1. Mix the chili crisp, Kewpie mayo, lime zest, lime juice, soy sauce, and honey in a bowl. Scoop out 3 tablespoons of the sauce and set aside for serving.

  2. Cut the salmon into large cubes, about 2 inches each. Add to the remaining sauce and toss until every piece is coated.

  3. Air fryer: Arrange the salmon in a single layer in the basket and cook at 425°F for 8 minutes.
  4. Broiler: Arrange the salmon on a lined baking tray and broil on high for 7 minutes.
  5. Serve over rice with avocado and salad. Drizzle with the reserved sauce and more chili crisp.

Notes

  • Cut the salmon big (2-inch cubes stay juicy inside while the outside caramelizes). 
  • Save the sauce before it touches raw salmon so it is safe to drizzle at the end.
  • Watch the broiler closely. Honey and mayo brown fast.
  • Salmon is done when it flakes easily with a fork. The USDA recommends 145°F.
