Pat dry the chicken with paper towels.
6 chicken thighs
Season with salt & pepper on both sides.
1 teaspoon salt, 1 teaspoon black pepper
Heat a heavy skillet to medium-high (no oil!). Add the chicken, skin-side down. Cook 5 minutes until crispy, then flip and cook 2 more minutes.
Remove chicken to a plate.
Lower the heat to medium, add minced garlic, and sauté just until fragrant (about 30 seconds).
6 garlic cloves
Stir in honey + soy sauce + cold butter until the butter melts and the sauce thickens slightly.
3 tablespoon honey, 2 tablespoon soy sauce, 2 tablespoon cold butter
Return chicken to the pan and coat with the glossy sauce.
Serve it up with rice and greens and dive in!
