KBBQ chicken thighs marinated in gochujang, soy sauce, brown sugar and sesame oil, then grilled until the edges char. Nine ingredients, four hours in the fridge, twelve minutes on the grill.

Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 onion sliced thinly
  • 3 cloves garlic minced
  • 2 teaspoons fresh ginger grated
  • 1 tablespoon gochujang more if you like it spicy
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce for color and depth, do not skip
  • 2 tablespoons brown sugar use any sweetener
  • 2 tablespoons sesame oil toasted
To garnish
  • toasted sesame seeds
  • 2 scallions thinly sliced

Equipment

  • 1 Grill you can air fry or pan fry too.

Method
 

  1. In a large bowl or a zip top bag, whisk together the gochujang, soy sauce, dark soy sauce, brown sugar, sesame oil, garlic and ginger until the gochujang is fully broken up and no lumps remain.
    3 cloves garlic, 2 teaspoons fresh ginger, 1 tablespoon gochujang, 2 tablespoons soy sauce, 1 tablespoon dark soy sauce, 2 tablespoons brown sugar, 2 tablespoons sesame oil
  2. Add the chicken thighs and sliced onion to the marinade. Toss with your hands until every piece is coated, then seal or cover.

  3. Refrigerate for at least 4 hours, or overnight for the best flavor.
  4. Heat your grill to medium-high, around 400°F to 450°F. Clean the grates and oil them well, this marinade has sugar in it and it will stick if you skip this.
  5. Lay the chicken on the grill. Grill 5 to 6 minutes per side, until the edges are charred and the internal temperature reaches 165°F.
  6. Rest the chicken for 5 minutes, then slice against the grain. Top with the grilled onions, toasted sesame seeds and sliced scallions.

Notes

  • Do not skip the dark soy sauce. Without it the chicken tastes fine but looks washed out.
  • Four hours is the real minimum for marinating, overnight is better.
  • No grill? Use a cast iron grill pan over medium-high for 5 to 6 minutes per side, broil 6 inches from the element for 6 to 8 minutes per side, or bake at 425°F for 20 to 25 minutes and finish under the broiler.You can use the air fryer too. 
  • Perfect for meal prep. I love to batch this on the weekend for the week.
