Ingredients

  • 1 pound lean ground beef
  • 4 green onions whites and green tops separated
  • 2 tablespoon garlic minced
  • 1 tablespoon ginger minced
  • ¼ cup water or broth I used chicken bone broth
  • 2 tablespoons brown sugar or any sweetener
  • 3 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • salt and pepper to taste
  • sesame seeds optional, to garnish
To serve
  • 2 cups steamed rice
  • 2 cups broccoli steamed
  • 1 cup carrots steamed or raw

Equipment

Method

  1. Mix the brown sugar, soy sauce, dark soy sauce and sesame oil in a small bowl. Mix the cornstarch and water in another.
¼ cup water or broth, 2 tablespoons brown sugar, 3 tablespoons soy sauce, 1 teaspoon dark soy sauce, 1 teaspoon sesame oil, 1 tablespoon cornstarch
  2. Heat a large skillet over medium-high heat. Add the ground beef, press it into an even layer and sear without stirring for 3 minutes. Break it up and cook until browned and crispy in spots, about 5 to 6 minutes total. Drain excess fat if needed.
    1 pound lean ground beef
  3. Add the ginger, garlic and green onion whites. Cook for 1 minute until fragrant.
4 green onions, 2 tablespoon garlic, 1 tablespoon ginger
  4. Pour in the sauce and stir to coat. Simmer for 1 to 2 minutes. Taste and adjust with salt and pepper.
    salt and pepper
  5. Stir the slurry, pour it in and cook for about 1 minute until the sauce is glossy and thick.
  6. Spoon over rice with broccoli. Finish with the green onion tops and sesame seeds.
sesame seeds, 2 cups steamed rice, 2 cups broccoli, 1 cup carrots

Notes

  • Don't stir the beef for the first 3 minutes so it builds a crust. Lean ground beef gives a cleaner glaze. Add the slurry last so the sauce doesn't go gummy.
