Ingredients
2 NY strip steaks (1.5" thick)
3-inch ginger
6 garlic cloves
3 green onions
3 tbsp butter
2 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp of sweetener (white sugar)
2 tsp baking soda
1 red chili (optional)
1/2 tsp salt
1 tsp of pepper
avocado oil for searing (about 1/4 cup)
Instructions
- Make sure your steak is at room temperature. Cut your steaks into 2" cubes.
- Put your steak into a large bowl.
- Add the salt, pepper, soy sauce, and baking soda to tenderize the beef.
- Marinate for 5 minutes. In the meantime, slice your ginger, green onions, and chili. Smash your garlic. Set it aside. Prep everything at once as it comes together really quickly.
- In a cast iron skillet, put enough avocado oil to cover the pan. Once the oil is preheated, hot sear the steak bites for 2-3 minutes on each side. Make sure the pan is hot. You do want your beef to have a nice crust on the outside and not overcooked.
- On high heat, sear the beef in batches. A single layer is best. Do not overcrowd.
- Once all the beef is seared throughout, discard the oil.
- On medium heat, add the butter, ginger, garlic, and green onions and saute until fragrant. Add the oyster sauce and sugar.
- Add back the steak bites and saute for 3-4 minutes on medium-high heat. Mixing well to make sure everything is covered in the sauce.
- For tender steak bites, rest it for 3-5 minutes.
Notes
- Discard the avocado oil when you are finished searing the steak bites.
- Do not crowd the beef, sear in batches.
