This is nostalgia in a bowl. Every Asian household ate some sort of Spam Fried Rice growing up. This is my version.

  • Total Time: 20 minutes
  • Yield: 2-4 1x

Ingredients

Scale

1 can SPAM cut into 1/2-inch cubes

1 tbsp of soy sauce

1 tbsp of sugar

1 tbsp of water

2-3 cups of day-old rice

2 eggs, whisked

1/2 cup corn (frozen and thawed for 5 minutes)

1/2 cup carrots and peas (frozen and thawed for 5 minutes)

1 bunch of green onions (separate the white is for the sauteeing and the green part for garnishing)

5 cloves garlic minced

1 tbsp sesame oil

avocado oil for frying

salt and pepper

nori cut into long pieces for garnish

Instructions

  1. Prep your ingredients. MISE EN PLACE
  2. Get the corn, peas, and carrots out of the freezer to thaw out for a few minutes. Run them under hot water for 1 minute using a sieve or a colander. Set aside.
  3. Mince the garlic. Cut and separate the green onions. White is for sautéing and green is for garnishing.
  4. Whisk 2 eggs. Set aside.
  5. Take your spam out of the can and cut it into 1/2-inch cubes.
  6. In a small bowl, make your musubi sauce. Combine soy sauce, sugar, and water.
  7. In a wok, on medium-high heat, fry up the spam cubes until crispy. 2 minutes then remove and set aside.
  8. Add some oil and sauté the white part of the green onion and garlic until fragrant and golden brown.
  9. Add in the cold rice and break it up in the wok and fry it until it is fried and ready. Season your rice with salt and white pepper
  10. Make a well in the middle of the rice. Add some more avocado oil, add the eggs, let it cook for a minute, and mix it in with the rice.
  11. Move the rice and eggs to one side of the pan, add a little more oil, and add the corn, carrots, and peas. Let the vegetables cook for 2 minutes and combine everything.
  12. Add back the spam. Mix well.
  13. Drizzle sesame oil at the very end.
  14. Garnish with green onions, nori pieces, and a drizzle of sriracha.

Notes

  • Use day-old rice
  • Make sure everything is prepped before starting as it comes together quickly.
