Ingredients
1 can SPAM cut into 1/2-inch cubes
1 tbsp of soy sauce
1 tbsp of sugar
1 tbsp of water
2-3 cups of day-old rice
2 eggs, whisked
1/2 cup corn (frozen and thawed for 5 minutes)
1/2 cup carrots and peas (frozen and thawed for 5 minutes)
1 bunch of green onions (separate the white is for the sauteeing and the green part for garnishing)
5 cloves garlic minced
1 tbsp sesame oil
avocado oil for frying
salt and pepper
nori cut into long pieces for garnish
Instructions
- Prep your ingredients. MISE EN PLACE
- Get the corn, peas, and carrots out of the freezer to thaw out for a few minutes. Run them under hot water for 1 minute using a sieve or a colander. Set aside.
- Mince the garlic. Cut and separate the green onions. White is for sautéing and green is for garnishing.
- Whisk 2 eggs. Set aside.
- Take your spam out of the can and cut it into 1/2-inch cubes.
- In a small bowl, make your musubi sauce. Combine soy sauce, sugar, and water.
- In a wok, on medium-high heat, fry up the spam cubes until crispy. 2 minutes then remove and set aside.
- Add some oil and sauté the white part of the green onion and garlic until fragrant and golden brown.
- Add in the cold rice and break it up in the wok and fry it until it is fried and ready. Season your rice with salt and white pepper.
- Make a well in the middle of the rice. Add some more avocado oil, add the eggs, let it cook for a minute, and mix it in with the rice.
- Move the rice and eggs to one side of the pan, add a little more oil, and add the corn, carrots, and peas. Let the vegetables cook for 2 minutes and combine everything.
- Add back the spam. Mix well.
- Drizzle sesame oil at the very end.
- Garnish with green onions, nori pieces, and a drizzle of sriracha.

- Use day-old rice
- Make sure everything is prepped before starting as it comes together quickly.
