Every Asian family has its version of spam, eggs, and rice. This was mine. I was obsessed with spam and rice growing up. I make this from time to time especially when I think about my dad. He passed away this year and this dish always reminds him of all the times he made us fried rice. Spam Fried Rice was his specialty.

Ready in 15 minutes, you can basically use whatever vegetable you have on hand. Easy peasy. Drizzle some sriracha and it's heaven in your mouth.

My inspiration is Spam Musubi
Spam Musubi is spam and rice wrapped in nori. This classic Hawaiin snack can be found all over the islands. I have made soam musubi plenty of times but this spam fried rice totally elevates this iconic dish.

Ingredients and Substitutions
RICE - I used day old jasmine rice. It is extremely important to use day old rice as new rice will clump up.
SPAM - no substitution for this.
SOY SAUCE - I used low-sodium soy sauce. Feel free to use tamari or coconut aminos.
SUGAR - I only use a tiny bit to give that spam musubi flavor
VEGETABLES - The beauty of fried rice is you can put whatever you want in it. This is a great way to use leftovers. In this recipe, I used corn, peas, and carrots.
GARLIC - You need fresh minced garlic.
SESAME OIL - This is a must in all fried rice.
GARNISH:
Green onions, pieces of nori, and a drizzle of sriracha
How to make Musubi Spam Fried Rice
- Prep your ingredients. MISE EN PLACE
- Get the corn, peas, and carrots out of the freezer to thaw out for a few minutes. Run them under hot water for 1 minute using a sieve or a colander. Set aside.
- Mince the garlic.
- Cut and separate the green onions. White is for sautéing and green is for garnishing.
- Take your spam out of the can and cut it into ½-inch cubes.
- Whisk 2 eggs. Set aside.
- In a small bowl, make your musubi sauce. Combine soy sauce, sugar, and water.
- In a wok, on medium-high heat, fry up the spam cubes until crispy. 2 minutes then remove and set aside.
- Add some oil and sauté the white part of the green onion and garlic until fragrant and golden brown.
- Add in the cold rice and break it up in the wok and fry it until it is fried and ready. Season your rice with salt and white pepper.
- Make a well in the middle of the rice. Add some more avocado oil, add the eggs, let it cook for a minute, and mix it in with the rice.
- Move the rice and eggs to one side of the pan, add a little more oil, and add the corn, carrots, and peas. Let the vegetables cook for 2 minutes and combine everything.
- Add back the spam. Mix well.
- Drizzle sesame oil at the very end.
- Garnish with green onions, nori pieces, and a drizzle of sriracha.

This varies. Essentially, you can use whatever sauce you want. I only use soy sauce, sugar, and water. But others have added mirin, rice vinegar, oyster sauce, and so much more.

This is nostalgia in a bowl. Every Asian household ate some sort of Spam Fried Rice growing up. This is my version.

Ingredients
1 can SPAM cut into ½-inch cubes

1 tbsp of water
