These Honey Buffalo Wings are my go-to when I want something fun, messy, and ridiculously good. Think crispy baked wings tossed in a sweet-spicy glaze that hits every craving at once. They’re easy, they’re addictive, and they disappear fast.

Ingredients
  

For the wings
  • lb chicken wings whole or cut into flats & drumettes
  • ½ tablespoon baking powder this is your secret crispy weapon
  • ½ tablespoon black pepper
  • ½ tablespoon smoked paprika
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
(Optional: a good pat-dry with paper towels for extra crisp)
For the honey buffalo glaze
  • 3 tablespoon unsalted butter melted & hot
  • 2 teaspoon lemon juice
  • 1 tablespoon hot sauce or your homemade buffalo sauce
  • 2 tablespoon honey

Equipment

  • 1 Wire rack
  • 1 Large baking tray
  • Parchment paper for easy clean up
  • 1 small pot
  • 1 Large bowl to mix

Method
 

  1. Preheat your oven to 425 °F (≈ 220 °C)
  2. Pat the wings very dry with paper towels.
  3. In a large bowl, toss the wings with baking powder, black pepper, smoked paprika, garlic powder and onion powder until evenly coated.
  4. Arrange the wings on a wire rack set over a baking sheet (let the air circulate for crispiness). Line the baking tray with parchment paper or foil for easy clean up.
  5. Bake for 1 hour, flipping halfaway (about 30 min) until skin is deeply golden and crisp.
  6. Meanwhile, in a small saucepan over medium-low heat, combine butter, lemon juice, hot sauce and honey. Stir until butter melts and mixture is smooth.
  7. When wings are done, transfer to a large bowl. Pour the warm glaze over the wings and toss until every luscious piece is coated.
  8. Serve immediately (because waiting hurts).

Notes

✔️ ALWAYS use aluminum-free baking powder (regular still works, but may leave a slight metallic taste)
✔️ DO NOT USE baking soda - it tastes bitter and will ruin your wings
✔️ Pat the wings bone dry first so the baking powder can actually do its job
