- Prep the Puff Pastry: Lightly flour your work surface and roll out the puff pastry sheet. Using a sharp knife cut the pastry into long triangles or strips. 
- Wrap the Smokies: Take one triangle or strip of puff pastry and wrap it around each little smoky, starting at the wide end and rolling toward the point. Place the seam-side down. 
- Air Fryer Basket: Arrange the wrapped smokies in a single layer in your air fryer basket. Be sure to leave a little space between each one for even cooking and air circulation. 
- Egg Wash & Seasoning: Brush the tops with beaten egg for that shiny, golden finish. Sprinkle a bit of everything bagel seasoning or any topping you want on top. 
- Air Fry: Air fry at 350°F (175°C) for 12 minutes, or until the puff pastry is puffed and golden brown. Cooking time may vary slightly depending on your air fryer model, so keep an eye on it after the 12 minute mark. 
- Serve & Enjoy: Let them cool slightly before serving. These are delicious on their own or paired with your favourite dipping sauces (honey mustard, ketchup, or ranch sauce).
