Ingredients and Substitutions
Noodles: use any noodles you have on hand. Any dry wheat noodles should work. I used ramen noodles for this recipe.
Avocado oil: Any neutral oil should work.
Green onion and Garlic: aromatics play a big role in the flavor. Use fresh.
Red miso: Any miso paste should work. This can be found at any grocery store.
Honey: A little sweetness can balance the heat.
Gochugaru: Korean red pepper. Used in making kimchi and my Ultimate Garlic Chili Oil.
Red chili flakes: For extra heat. Feel free to omit it.
Peanut butter: Adds so much creaminess.
Garnish:
Green onions - will give it more flavor and color.
Sesame seeds - can be found at any grocery store.
Crispy shallots - can be found at any Asian grocery store.

How to make your noodles
- In a medium size pot, boil water.
- Prep your ingredients. Slice your green onions and mince the garlic.
- Once the water is boiling, add the noodles and cook according to the package instructions.
- Add green onions, garlic, chilis, honey, miso, and peanut butter in a large bowl.
- In a small pot, heat the oil.
- Add the hot oil to the large bowl. Mix well.
- Strain the noodles and add to the large bowl.
- Combine well and enjoy!
WHAT ARE GARLIC CHILI OIL NOODLES?
This Garlic Chili Oil Noodle recipe is inspired by a traditional Chinese dish called You Po Mian (油泼面). This is where hot oil is poured onto aromatics and chilis. I added Miso for extra umami that takes this dish to the next level. Peanut butter is also added for that addictive creaminess that you will love.
TIPS FOR MAKING THE BEST NOODLES
- Cook the noodles exactly to the package instructions. You do not want mushy noodles.
- Use good quality noodles. Although this recipe is versatile and uses what you have on hand, it's always best to use quality noodles. I love using Taiwanese knife-cut hand dried noodles.
- I love adding soft-boiled (6-minute eggs) for extra protein, but you can add whatever protein you like, such as tofu, prawns, or chicken.
