What is rice paper?
Rice papers are a staple ingredient in any Asian cuisine. It is used for salad rolls, spring rolls, and dumplings; you can even make rice paper noodles with them. You can buy rice paper at any grocery store. They are located in the International isle. You can purchase them at Asian grocery stores as well as on Amazon. I like this brand.

Making rice paper chips
Making rice paper chips is easy.
- Cut the rice paper into quarters.
- In a large skillet, heat up 5 tablespoon of oil. Once it is hot, drop 1 piece of rice paper and watch it turn into chips in 2 seconds.
- Remove with a pair of tongs and set it on a plate with paper towels.
- Repeat this process.

Crispy Prawns:
Prawns
Potato starch
Garlic powder
Turmeric
Pepper
Salt
Oil for shallow frying
Spicy Mayo Sauce:
Kewpie mayo
Sriracha
Honey
Sesame oil
Rice Paper Chips:
Rice paper
Oil for frying
Sesame Cabbage slaw:
Cabbage
Rice vinegar
Soy sauce
Sesame oil

Garnish:
Black sesame seeds

Instructions
Crispy Prawns
- Peel and devein the prawns.
- Add the prawns, garlic powder, turmeric, potato starch, salt, and pepper in a large container. Cover with a lid and shake it.
- Heat the oil in a cast iron skillet and shallow fry the prawns. Do not overcrowd.
- Remove when the prawns when they are golden brown and crispy. Set aside.

Sesame Cabbage Slaw
- Shred the cabbage
- Add rice vinegar, sesame oil, honey, soy sauce, and grated ginger in a bowl. Mix well.
- Add the cabbage and combine well. Set aside.

Spicy Mayo Sauce
- Combine 1 tablespoon kewpie mayo, sriracha, honey, and sesame oil in a small bowl.
- Mix well and set aside.

Rice Paper Chips
- In a skillet, heat up 4 tablespoons of grapeseed oil.
- Once the oil is hot, add the rice paper one at a time. Once the paper crisps up, help fold it a bit, so it shapes like a taco shell.

Assemble
- In the rice shell, add cabbage slaw, and crispy prawns and top it with spicy mayo, sesame seeds, and green onions.
- Serve and enjoy!

Top tip for success
- Prep all the ingredients first, then assemble them at the very end. The crispy rice paper chips are great when they are crispy.
