What does ube taste like?
Ube is a root vegetable (purple yam) known for being in desserts like ice cream, pastries, mochis, and so on. It has the most beautiful deep purple color. Most people mistake it for taro but ube is its own thing. This root vegetable originated in the Philippines. Ube tase like a super sweet potato but less starchy.

How to make Ube Cookies

- Preheat the oven to 350 degrees.
- In an electric mixer bowl using a paddle accessory, beat the butter, and both sugars.
- Beat in the salt, vanilla, eggs, and ube extract until well combined.
- In a separate bowl, whisk the flour and baking soda.
- Mix in the flour mixture until just combined.
- Add and stir in the white chocolate chips and macadamia nuts.
- Using a 1" ice cream scoop, drop a ball of dough 1-2 inches apart in a parchment-lined baking tray.
- Bake the cookies for 9-10 minutes.
- Let the ube cookies cool on a cooling rack.
- Enjoy!
