Juicy, sticky, garlicky chicken that works on the grill, in a pan, or in the air fryer. This asian chicken marinade is a mix of soy sauce, dark soy, honey, rice vinegar, fresh lime, garlic, and ginger that turns chicken thighs deeply savory and lightly sweet in as little as 1 hour. Marinate the chicken, cook and you're done.

I tested this on more batches of thighs than I want to admit. The big lesson: marinate for a maximum of 1 hour. Any longer and the lime juice and vinegar start breaking down the meat and the texture goes mushy. Nobody wants mushy chicken.
This is your back pocket weeknight dinner and your meal prep Sunday hero. Ten thighs in one bowl feeds the family tonight and covers lunches all week, and it earns its spot at summer BBQs because marinated thighs on the grill disappear fast.
