I just got home from the beach with the craziest craving for my dad's bacon fried rice. So I made it. This is my dad's recipe from when I was a kid and it is the best comfort food.

Crispy thick-cut bacon, day old rice, scrambled eggs, frozen vegetables, and a cold butter finish that makes everything glossy and rich. It comes together in 15 minutes and tastes better than any takeout I have ever ordered.
This is a side dish that works as a main and is guaranteed to become a family favorite. Serve on the side of any protein, late night craving, beach day recovery meal... or just eat it straight from the wok… we've all done it.

How to make (PICTURES)

- Step 1: Cook the bacon. Then remove from pan and set aside. Drain excess fat, leaving about 1 tablespoon in the pan.

- Step 2: Saute aromatics. Add shallot and garlic to the bacon fat and cook for 1 minute until fragrant.

- Step 3: Add cold day old rice. Cook for about 2 minutes.

- Step 4: Add frozen vegetables and cook for 2 minutes. Add the crispy bacon back in and toss everything together.

- Step 5: Make some room on the side. Add eggs and let them sit for 1 minute before scrambling.

- Step 6: Add the sauces, mix and add back the bacon.

Top tips
- Day old cold rice is non-negotiable. Freshly cooked rice is too wet and steams instead of fries. Cold rice from the fridge separates and crisps up perfectly.
- Add the cold butter at the end.
- Start the bacon in a cold pan. Adding bacon to a cold pan and bringing it up slowly renders the fat better and gives you crispier pieces.

- Mince shallot and garlic, cut bacon into small pieces, and have all ingredients ready next to the stove before you start. Fried rice moves fast.
- Add bacon pieces to a cold wok or large skillet. Turn heat to medium-high and cook until crispy. Remove bacon and set aside. Drain excess fat, leaving about 1 tablespoon in the pan.5 strips thick-cut bacon

- Make a well in the centre of the rice. Add eggs and let them sit for 1 minute before scrambling. Once just set, mix into the rice.2 eggs
