- Step 1: Pat dry the chicken with paper towels. Season with salt & pepper on both sides.

- Step 2: Heat a heavy skillet to medium-high (NO OIL!). Add the chicken, skin-side down.

- Step 3: Cook 5 minutes until crispy, then flip and cook 2 more minutes.

- Step 4: Remove chicken to a plate. Lower the heat to medium, add minced garlic, and sauté just until fragrant (about 30 seconds).

- Step 5: Stir in honey + soy sauce + cold butter until the butter melts and the sauce thickens slightly.

- Step 6: Return chicken to the pan and coat with the glossy sauce.
