How to make shrimp fried rice

Cook the shrimp with some oil and garlic. Season with a pinch of salt and pepper. Remove and set aside after the shrimp is cooked through.

With a little more oil, saute the garlic. Add in the rice. Make a well and crack the eggs. Let the eggs cook a little bit and scramble. Saute well.

Add the frozen vegetables. Season with some soy sauce, salt, and white pepper or black pepper.

Add back the shrimp and butter. Saute until everything is incorporated well.
- Step 1: Prep the Ingredients:
- Ensure that your fresh rice is cooked and cooled. Day-old rice works best for fried rice as it's less likely to become mushy.
- Prepare and chop all your vegetables, garlic, and green onions. Have everything ready before you start cooking.
- Step 2: Cook the Shrimp:
- Heat a single layer large skillet or wok over medium-high heat. Add a little oil (1 tablespoon oil) to coat the pan.
- Add the raw shrimp and cook for about 1-2 minutes on each side until they turn pink and opaque. Remove them from the hot pan and set them aside.
- Step 3: Scramble the Eggs:
- In the same pan, add a bit more oil if needed. Push the tender shrimp to one side and pour the beaten eggs into the other side of the pan.
- Allow the eggs to cook for about 1 minute, then gently scramble them until they are fully cooked.
- Step 4: Add Vegetables and Garlic:
- Push the fluffy egg to one side and add the minced garlic to the other side of the pan. Cook for about 30 seconds until fragrant.
- Add the mixed vegetables and stir fry for about 2-3 minutes until they are tender but still crisp.
- Step 5: Add Rice:
- Add the cooked rice to the pan and break up any clumps with a spatula. Stir everything together so the rice is well-incorporated with the vegetables and eggs.
- Step 6: Season and Incorporate:
- Drizzle the soy sauce (and oyster sauce if using) evenly over the rice. Continue to stir-fry for another 2-3 minutes, ensuring everything is well-mixed.
- Step 7: Add Shrimp Back In:
- Return the cooked shrimp to the pan. Stir everything together for another minute or until the juicy shrimp are heated through.
- Step 8: Taste and Adjust:
- Taste the good fried rice and add salt and pepper or bell pepper if needed. You can also adjust the soy sauce or oyster sauce to your preference.
- Step 9: Finish and Serve:
- Stir in the sliced green onions. Optionally, garnish with sesame seeds and chopped cilantro for extra flavor and presentation.
- Step 10: Serve Hot:
- Serve the homemade shrimp fried rice hot. Enjoy!
Substitutions
- Peeled and deveined prawns: Use cooked and shredded chicken or tofu for a vegetarian option.
- Minced garlic: Garlic powder or garlic paste can be used as a convenient alternative.
- Day-old rice: Freshly cooked rice is fine; just ensure it's cooled before using. Quinoa or couscous can be alternatives.
- Eggs lightly beaten: For an egg-free option, try silken tofu crumbles or skip it altogether.
- Frozen vegetables (corn, peas, and carrots): Fresh vegetables like bell peppers, broccoli, and snap peas can be used. Canned mixed vegetables are also a convenient option.
- Cauliflower rice (optional): Regular rice or quinoa can be used as a substitute. Alternatively, you can skip this ingredient or use spiralized zucchini for a low-carb option.
- Garlic: I recommend fresh garlic but if you need a substitution - Garlic Powder or Garlic Paste will work.
- Green Onions (White and Green Parts): White or Yellow Onion
- Neutral Oil (e.g., Avocado Oil): Canola, Grapeseed, or tablespoon Vegetable Oil.
- Soy Sauce: Tamari (gluten-free), Coconut Aminos (soy-free, lower sodium)
- Sesame Oil: Toasted Sesame Seed Oil or Olive Oil (milder flavor)
- Butter: Margarine, Ghee, or Coconut Oil, peanut oil (dairy-free)
Equipment
- Wok
- Cutting board
- Knife
- Bowls
How to store and reheat your Shrimp Fried Rice
Storing Shrimp Fried Rice:
- Refrigerate Promptly: Transfer the best fried rice to an airtight container or sealable plastic bag. Ensure it's tightly sealed to prevent so much moisture from getting in. Place it in the refrigerator within two hours of cooking.
- Label and Date: If you won't be using it within the day or next day, it's a good practice to label the container with the date. The best thing is it helps you keep track of how long it's been stored.
- Refrigeration Duration: Shrimp fried rice can be safely stored in the refrigerator for up to 3-4 days. Freeze for up to 2 months.
Reheating Shrimp Fried Rice:
Stovetop or the microwave are the best ways to reheat your shrimp fried rice.

Top Tips for making the best fried rice
Mise en Place:
- Chilled Rice: Use cold leftover rice for a better texture. Stick it in the fridge for a few hours or overnight. No one wants mushy rice.
- Prep Everything: Chop ingredients, get fresh shrimp ready, and measure sauces before you start cooking.
Quick Cooking:
- Hot Pan: Use a well-heated wok or skillet for that classic stir-fry taste.
- Cook in Stages: Don't crowd the pan. Cook shrimp and veggies separately from the rice (brown rice) for the perfect sear.
Season well:
- You can use soy sauce, oyster sauce, fish sauce, and a bit of sesame oil for a tasty mix of savory, salty, and umami. You can play around with this. But less is more.
- Start with Aromatics: Infuse oil with garlic and ginger early for the best flavor. Give this recipe a try—it's a winner!
