Flaky, golden pastry. A filling that tastes like it simmered all day. This chicken pot pie with puff pastry is the cozy dinner you can actually pull off on a weeknight. This chicken pot pie using puff pastry starts with chicken breast cooked right in the skillet with onion, carrots and celery, simmered in a white wine cream sauce, then topped with overlapping squares of store-bought puff pastry and baked at 425°F for 25 to 30 minutes until golden and bubbly. No rotisserie chicken, no pie crust, no stress.

This puff pastry chicken pot pie uses store bought puff pastry which I cut the puff pastry into squares instead of laying down one big sheet. Every square gets its own crispy edges, steam escapes between them, and you never get that raw, doughy middle. Better Than Bouillon gives the sauce that slow-simmered flavor in minutes. This recipe is so good and it takes about an hour to make. It is a show stopper, you'll love it.
Nothing says comfort like chicken pot pie. This puff pastry version is the best and the only way I will make pot pies from now on. It is just so easy and my family loves it.
This is my classic version: no leeks, no precooked chicken, just the basics done right. If you want something a little sweeter and softer, try my skillet chicken pot pie with leeks.
