What you need for Asian Boneless Short Ribs
Instant Pot
2-3 pounds of boneless short ribs
The bone-in were on sale, I just removed the bones. Easy peasy.
You can also substitute chuck roast cut into 4" cubes or use other cuts of beef. Short ribs happen to be on sale at the time.
The bones bring so much flavor to this dish so feel free not to remove the bones. My children are at a picky stage in their lives and they don't really like the bones so I removed it. Problem solved.
sauce - sake, mirin and soy sauce
These three ingredients are the holy grail ingredients of Teriyaki Sauce which I make from scratch all the time.
SAKE - Very important ingredient, but if you do not have it, use beef broth instead.
MIRIN - a classic Japanese seasoning.
SOY SAUCE - use Tamari if you have a gluten allergy.

AROMATICS - GINGER and GARLIC
Again, classic Teriyaki flavors. Aromatics are everything. Only use FRESH and avoid using powder ginger or garlic powder in this dish.
Cornstarch slurry
This is optional. If you want your sauce to be a little thicker, feel free to add this. Otherwise, reduce the sauce at the end and enjoy!

INSTANT POT - mine is a 6 quart. Any Instant Pot should work.



Instructions
Step 1
- Prep the beef by removing the bones. Keeping it bone-in makes it more flavorful. My kids do not like bones, so I took it out.
- Season with salt and pepper on all sides.
Step 2
- In the instant pot, turn on to saute function.
- Brown the meat on all sides. The best short ribs have a good sear. This will lock in all the flavors and juices. Do it in batches. Do not overcrowd your pan. This will take 10 - 15 minutes.
Step 3
- While you are waiting for your beef to brown, prep your aromatics. Julienne the ginger and smash the garlic.
- Mix your sauce in a bowl (soy sauce, mirin, brown sugar).
Step 4
- After the beef is browned, remove and set aside. Use a paper towel to remove the excess oil.
- Saute your ginger and garlic.
- Add the sake to deglaze the pan for 2 minutes.
- Add the sauce (soy sauce, mirin and brown sugar). Let it simmer for 2 minutes.
- Add the beef short ribs back in the pot.
- Put the lid on and set the Instant Pot on MANUAL for 40 minutes.
Step 5
- When the Instant Pot is done, let it come to a natural release for 10 minutes. Or do a quick release by pushing the release valve to the side.
- Remove the meat and set it aside.
- Go back to the SAUTE FUNCTION and let the sauce reduce. 5 minutes.
- There will be a ton of liquid, so let it reduce to the consistency and flavor you like. Add the cornstarch slurry at this point.
- Add back the Asian Boneless Short Ribs.

- Let it come to a natural release for 10 minutes or do a quick release.
- Remove the meat and set it aside.
- Reduce the liquid to the desired thickness. Feel free to add a cornstarch slurry to thicken it up.
