These garlic butter steak bites are not your average butter and parsley situation. We're talking a miso compound butter with miso and gochujang that melts right into the seared steak and does something truly unhinged to your mashed potatoes.

I'm a huge garlic butter steak bites fan, and this is my version. I wanted to take something already delicious and make it even better, so I added miso and gochujang to the compound butter. The miso adds that deep, salty umami punch. The gochujang brings just enough warmth without blowing anyone's head off. Together, they create a butter sauce that makes the plain version feel like it's missing something. Trust me, you need this!
The whole thing comes together in about 15 minutes, there's no marinating involved, and it goes on top of mashed potatoes like it was always meant to be there.

- Step 1: Prep the steak bites and the compound butter.

- Step 2: Get the pan really hot and start searing the steaks 1 minute on each side.

- Step 3: Don't over crowd the pan. Do it in batches. Remove and set aside.

- Step 4: Add the garlic and the compound butter.

- Step 5: Add back the steak bites and toss.

- Step 6: Serve with mashed potatoes and chopped parsley.

Miso Garlic Butter Steaks

- Cut your steaks into even bite-sized cubes. Add them to a bowl with the salt and black pepper. Toss to coat.2 steaks, ½ teaspoon salt, 1 teaspoon black pepper
- In a small bowl, mix together the softened butter, miso paste, and gochujang until fully combined. Set aside.¼ cup unsalted butter, 1 tablespoon white miso paste, 1 teaspoon gochujang
- Heat a cast iron skillet over high heat. Add the avocado oil and let it get very hot. You want the steak to sizzle the second it hits the pan.2 tablespoons avocado oil
- Add the steak bites in a single layer, don't crowd the pan. Sear for 1 minute on the first side without moving them, then flip and sear for another minute. Work in batches if needed.
- Remove the steak from the pan and set aside on a plate.
- Reduce the heat to medium. Add the minced garlic to the same pan and add the miso butter.4 cloves garlic
- Stir and let the butter melt for about 1 to 2 minutes until the garlic is fragrant and the butter sauce comes together.
- Add the steak bites back into the pan and toss to coat in the sauce.
