These strawberries and cream overnight oats are my go-to when I want something that feels special without having to do any work the morning of. You can literally spend 10 minutes the night before and wake up to a little jar of heaven.

The secret is my famous, yet super simple strawberry compote swirled right into the oat base. Instead of just mixed-in fruit, it is a warm, jammy, sweet strawberry sauce that soaks into every single bite while the oats sit overnight. The difference is unreal.

The compote takes about 8 minutes on the stove and it could not be simpler. Strawberries, a little maple syrup, vanilla and done. I always make a double batch because I find it is a super delicious addition to so many other staples like my matcha lattes, coconut chia pudding, or just eaten with a spoon straight from the pot. No judgment.
You literally just mix everything in a jar before bed and wake up to breakfast already done. My kids grab these creamy strawberry overnight oats before school without me asking twice and that alone is obviously worth the quick 10 minute prep.

- Step 1: Make the compote. Combine compote ingredients into small saucepan over medium heat. Cook 6-8 minutes, stir occasionally.

- Step 2:Mix the oat base. In a jar combine oats, milk, Greek yogurt, condensed milk, chia seeds, vanilla, and salt. Stir well until everything is combined.

- Step 3: Swirl in the compote. Add 3 to 4 tablespoons of cooled strawberry compote to the jar. Use a spoon or knife to swirl it gently into the oat mixture.

- Step 4: Refrigerate overnight. Seal the jar and refrigerate for at least 6 hours or overnight.

- Step 5: Top and serve. In the morning, add fresh sliced strawberries, a dollop of Greek yogurt, and a small drizzle of condensed milk or honey. Add granola right before eating if you want a crunch.

STORAGE
- Fridge: Sealed jars up to 4 days. Do not freeze. The texture of the oats changes significantly and it won't be enjoyable.
- Serve cold straight from the fridge. No reheating needed.
- Store compote separately in an airtight container up to 1 week.
Top Tips
- Let the compote cool before adding it. Warm compote will start cooking your oats slightly and change the texture. Give it 15 to 20 minutes to cool down or make it the night before.
- Swirl, don't stir. You want pockets of jammy strawberry throughout the oats, not a uniformly pink jar. The swirl is also what makes it look gorgeous in photos.
- Meal prep tip: make four jars at once. The base keeps in the fridge for up to 5 days. Make one batch of compote for the whole week and you are done.

Can I use fresh strawberries instead of making a compote? Yes but the compote gives you a concentrated jammy flavor that fresh strawberries cannot replicate. If you are short on time slice fresh strawberries and layer on top instead.
How long do these keep in the fridge? Up to 5 days in sealed jars. They actually get creamier after the first night.
Can I use a different milk? Yes. Any milk works. Oat milk gives the creamiest result.
Can I use regular sugar in the compote? Yes. Honey, maple syrup, or regular sugar all work. Start with less and adjust to taste.
Can I eat these warm? Yes. Microwave in 30-second intervals and stir between each. The texture changes slightly but still works.
Do I have to make the compote from scratch? No. A good quality store-bought strawberry jam works as a shortcut. One tablespoon per jar.
