Two cups of sweet potato. Zero butter. Zero oil. These sweet potato brownies are dense, chocolatey and so moist you'd never guess what's hiding inside. This sweet potato brownies recipe is a one bowl brownie where roasted sweet potato replaces the butter and oil, with cocoa, a shot of espresso and a full cup of chocolate chips doing the chocolate heavy lifting. Roast, mash, mix, bake.

I made these in my 10.5 x 7.5 inch Staub dish, and the thing I love most is how forgiving they are. All that sweet potato keeps them moist, so if they need an extra 5 minutes, they won't dry out on you. The espresso is my non-negotiable. You won't taste coffee, you'll just taste more chocolate.
I make this on my lutheal phase and they are outstanding. Very nutrient dense. SO delicious.
Roast, don't boil. Roasting concentrates the sweet potato flavor and keeps the puree thick, while boiled sweet potato adds water and makes brownies gummy. Short on time? Roast your sweet potatoes the day before, or make them in the air fryer.
