These spam musubi rolls take everything you love about the classic, crispy teriyaki glazed spam, seasoned furikake rice, and roll it all up sushi style with soft strips of egg. I tested these a few times to get the rice ratio right. A quarter cup per roll is the sweet spot. Any more and the nori splits, any less and the roll will not hold together. The spam only needs 2 tablespoons of teriyaki sauce, just enough to caramelize without going soggy.
I love making this for my boys if we're going to the beach, the park or even on our road trips. It's a great snack and they love it so much.

- Step 1: Season the warm cooked rice with rice vinegar, mirin, and furikake, then set aside.

- Step 2: Cook the beaten eggs into flat scrambled eggs and slice into long strips.

- Step 3: Pan fry the spam strips in a little oil until crispy on both sides. Add the teriyaki sauce and saute until the spam is glossy and caramelized.

- Step 4: Lay ¼ cup of rice on a nori half, top with egg and spam, and roll it up tightly, sealing the edge with a few grains of rice. Brush the outside of each roll with toasted sesame oil and serve.
