    Easy Cauliflower Fried Rice

    A delicious guilt free dish that ALMOST tastes like fried rice. Well, almost…

    Are you ready to join the cauliflower rice train? Are you looking for a healthy fried rice recipe? If you are, look no further.

    Cauliflower Fried Rice is an easy and delicious recipe to have in your house. It is healthy and incorporates veggies and uses last night’s leftovers.

    Cauliflower Fried Rice is a great side dish but you can also add other protein to make this a whole meal deal. So versatile. You and your entire family will love it.

    If you’re looking for a low carb option or paleo, look for my substitutions list down below.

    What you need

    Half a head of Cauliflower

    About 2-3 cups of riced cauliflower

    This is where I use my handy dandy food processor. I use the S-shape blade which is the basic blade all food processors should come with. You can even use a cheese grater for the same effect.

    If you do not have the time, you can buy pre-bagged priced cauliflower in most grocery stores. However, I love using my own cauliflower rice. Fresh is best!

    Use the other half of the cauliflower for roasting or rice the whole thing and keep it in a Ziplock bag or an airtight container with a paper towel in the bottom.

    leftover rice 1-2 cups (optional)

    You can use whatever leftover or fresh grains you want. I have made this with brown rice or quinoa. Jasmine rice has always been my favourite. Omit this for a low carb and paleo option.

    Traditionally people don’t put leftover rice. I happen to love rice and always have it in my fridge or freezer. I love incorporating leftovers into my dishes to reduce food waste. If you have a specific diet and cannot have grains, take it out.

    Eggs

    Whisked eggs work well, I get lazy sometimes and put it all in and whisk it in the pan. A great option is to add just egg whites. You do you!

    Soy Sauce

    For a gluten-free or paleo diet use Coconut Aminos or Tamari. Use whichever your diet allows you.

    Fresh or frozen, add or omit whatever you want. I like to use the frozen carrots, green peas and corn mix

    OILS

    • Toasted sesame oil is best with this. This is critical for a more Chinese restaurant “taste”. A little sesame oil goes a long way.
    • Olive oil or Avocado oil for frying

    I love using green onions and sesame seeds – totally optional.

    • Food Processor with S-Blade or Cheese Grater
    • Large nonstick skillet or a large wok
    • Wooden Spoon
    • Knife and cutting board

    let’s make Cauliflower Fried Rice

    PREP YOUR INGREDIENTS

    •  Clean and prep your cauliflower – cut into small parts
    • Pulse in the food processor until rice-like consistency
    • Mince your garlic

    START COOKING

    • In medium-high heat, sauté your garlic until fragrant and add in the rice. Turn the heat up high for this. 2 minutes. 
    • Break up the rice with your wooden spoon. 3 minutes. 
    • If you’re not using leftover rice. This is the time to put in the cauliflower. SAVE 1 CUP OF CAULIFLOWER. 
    • Make a well in the middle of the pan and add a tiny bit more oil. Put the egg and stir until it resembles scrambled egg. 

    SEASON WELL 

    •  Season with salt & pepper
    • Add the frozen vegetables. Cook for another 2-3 minutes. 
    • Add the soy sauce. Stir occasionally and taste to adjust seasoning.
    • ADD THE LAST REMAINING 1 CUP OF RICED CAULIFLOWER AND SAUTE IN HIGH HEAT.
    • Add the toasted sesame oil.
    • Add your garnishes (green onion and sesame seeds) STIR and SERVE

    Avoid soggy cauliflower

    Avoid soggy cauliflower. Cauliflower tends to get soggy when you add soy sauce. My trick is to save 1 cup of the riced cauliflower and cook it in the pan at the very end of your cooking time. LAST 2 MINUTES. Right before you add your sesame oil.

    Meal Prep Tip: 

    I would use the other half of the cauliflower for future dishes throughout the week. If storing in an airtight container, place a paper towel in the bottom. 

    I do not like frozen cauliflower. Fresh is BEST.  But feel free to use frozen.

    Ingredients

    1 cup frozen vegetables

    1 egg

    1–2 tablespoon olive oe avocado oil for frying

    1 tbsp toasted sesame oil

    Instructions

    1. Clean and prep your cauliflower – cut into small pieces
    2. Pulse in the food processor until rice-like consistency
    3. Mince your garlic
    4. In medium-high heat, sauté your garlic until fragrant and add in the rice.
    5. Add in the rice. Break it up with your wooden spoon.
    6. If you’re not using leftover rice. This is the time to put in the cauliflower.
      SAVE 1 CUP OF CAULIFLOWER.
    7. Make a well in the middle of the pan and add a tiny bit more oil. Put the egg and scramble it.
    8. Season with Salt & Pepper
    9. Add the frozen vegetables.
    10. Add the soy sauce. Stir occasionally and taste to adjust seasoning.
    11. Finally, add in the last 1 cup of riced cauliflower.
    12. Saute in HIGH HEAT for 2 minutes.
    13. Add the toasted sesame oil
    14. Add your garnishes (green onion and sesame seeds), stir and serve.

    Notes

      I have been looking for a Tasty keto cauliflower dish as I’m off potatoes. This recipe is delicious and the tip about saving a little of the rice to add at the end to give it that little crisp is fantastic. Love it
